Turkey Red was planted in Kansas in the 1870s by Mennonite immigrants from the Crimean Peninsula. The wheat is named after the Ottoman empire, which controlled the region at one point. Turkey Red is a predecessor of many modern American wheat varieties and boasts strong baking qualities. Great for focaccia, flatbreads, and other softer breads.
